Sweet, smoky, cheesy—downtown’s newest comfort trio.

MANSFIELD — One of the perks of writing a food column is people are always sending me things that look delicious.

About a month ago, a coworker sent me a photo of something smothered in cheese and utterly mouthwatering. It was a bright bowl of gooey, golden comfort food that made me want to grab a fork and dig in immediately.

The post came from a soft-launch ghost kitchen testing loaded baked potato bowls in downtown Mansfield. The feedback online was instant, and before long, Two Cousins Pizza announced the new creations were officially joining the menu.

And just so we’re clear, this isn’t about replacing pizza. It’s about celebrating creativity, comfort and flavor in a whole new form.

The story behind the spuds

That sense of play is exactly what drives owner Nicole Hamilton, the mind behind Two Cousins and its newest menu creations. What started as a ghost kitchen experiment quickly became a community favorite, so popular that keeping it delivery-only didn’t make sense.

As of October 2025, the baked potato bowls have a permanent home at Two Cousins Pizza, where Hamilton continues to blend innovation and local pride. The potatoes feature fresh ingredients like jalapenos from NECIC’s Urban Farm and her house-made Philly sauce.

Every bite is intentional, fresh, and fun—just like Hamilton’s rotating lineup of specialty pizzas. Over the years, she’s served everything from hot honey chicken and waffles to crab rangoon, Big Mac, and even a Gyro pizza made with ingredients from downtown neighbor Athena. She doesn’t take food too seriously, yet every experiment is crafted with care, flavor, and joy.

The tasting

The first bowl I tried was the barbecue brisket, a perfect balance of sweet heat and smoke. The potato was fluffy and beautifully cooked. Each bite had a little of everything—brisket, cheese, fresh tomato, jalapeno, and a spicy southwest chipotle aioli. It wasn’t too hot, just full of delicious, lingering flavor. 

Then came the Philly potato bowl, which might just be my new gold standard for comfort food. It’s loaded with tender, well-seasoned Philly meat, green peppers, onions, mushrooms, and a garlicky house sauce that ties it all together. The cheese melts into something rich and decadent, while the veggies add just the right crunch. Creamy, savory, indulgent—a solid 10 out of 10.

Lastly, there’s the Sweet potato bowl, a seasonal special that comforts like a warm hug. Brown sugar, cinnamon, butter, marshmallows, and a drizzle of caramel syrup come together over a tender sweet potato that tastes like dessert pretending to be dinner. I’m not complaining.

Why it works

Each bowl is hearty enough for more than one meal, and the “build-your-own” option lets you mix and match ingredients like mac and cheese, brisket, or Philly meat into your own custom creation. Every combination feels thoughtful and balanced—a mix of comfort, spice, and indulgence that keeps you coming back for more.

When I stopped in around lunchtime, the potatoes had only been on the menu for about an hour, and there were already customers sitting down with steaming bowls in front of them. Clearly, Mansfield’s love for spuds runs deep.

The space

Of course, food’s only part of the story. Two Cousins’ atmosphere has its own kind of charm.

For years, it’s been a cozy downtown spot, slightly dated but full of character. The walls once featured artwork from local artists and doodles from staff, small touches that made the space feel playful and personal. It’s always had that diner-like comfort, the kind of place where you feel welcome the second you walk in.

Now, it’s getting a well-deserved refresh. Local artist Allison Pence is helping give the space a new look, bringing in color, energy, and a modern touch while keeping the same friendly atmosphere regulars know and love. It’s the perfect reflection of Hamilton herself—rooted in community, full of creativity, and never afraid to try something new.

Under Hamilton’s ownership, Two Cousins has become more than a pizza shop. It’s a downtown staple with a reputation for trying new things, partnering with local businesses, and giving Mansfield something to talk about. For those of us who work downtown and eat there regularly, variety like this is a welcome surprise.

The bigger picture

Downtown Mansfield has faced its share of challenges lately, with ongoing construction making it tough for businesses to draw in foot traffic. But instead of slowing down, places like Two Cousins are doubling down on creativity. Hamilton’s baked potato bowls are perfectly timed for the season—comfort food that warms you up, supports local farms, and shows just how inventive small-town cooking can be.
