MANSFIELD — A new taco cart by the name “Panchos Tacos” is expected to make its debut later this month.

Run by Jesus Davalos and Alejandro Anchondo, Panchos Tacos will sell Mexican cuisine at local events.

Davalos, who co-owns Los 3 Mayas and El Campestre, said the idea sparked after speaking with customers who voiced interest in something like this.

“I’d like to do events,” he said. “Maybe we’ll start with the Final Friday Concerts at the Brickyard.”

At the concert in June, his crew from Los 3 Mayas set up a taco stand in the Brickyard, hearing lots of positive feedback, he said.

“People were excited that we were there,” he said.

Hoping to further that success, Davalos has created a new menu that includes tacos, quesadillas, burritos and Mexican hot dogs for Panchos Tacos. Davalos, who’s no stranger to the kitchen, said he’s always enjoyed cooking.  

Currently, Davalos is working on getting the logistics squared away so that the taco cart can open later this month, he said.

He’s excited about this new venture. “It’s different,” he said. “Maybe later on we’ll see about getting a food truck.”

A Facebook page is being set up for Panchos Tacos so customers will be able to know where the taco cart will be.
