MANSFIELD — Blackbird Bakery has been satisfying sweet-tooths since it opened in 2012.
Located inside Relax, It’s Just Coffee, Blackbird Bakery makes hand-crafted breads, pastries and sweets. The bakery is owned and operated by Desra Wells.
In the video below, Wells demonstrates how to make a cream cheese Danish.
Here’s the recipe:
- Mix together 1/4 cup warm water and 1 tablespoon active dry yeast in a bowl and let yeast dissolve in the water until frothy.
- Using a food processor, chop 3/4 cup cold, unsalted butter into 1 3/4 cups flour until kidney bean sized.
- Add 1/4 cup heavy cream, 1/4 teaspoon salt, 2 eggs and 1/8 cup sugar to the yeast mixture and stir. Add the flour mixture and stir until mixed. Chill over night.
- To roll the Danishes, flour work surface and push dough into a rough rectangle. Roll out into a 10×24 (approx.) rectangle. Fold into 3’s, turn 90 degrees and roll again into a 10×24 rectangle; fold into 3’s and cover and chill for 30 minutes.
- To make the filling, combine 8 ounces of cream cheese, 3 tablespoons sugar and 1 egg yolk; beat well with mixer.
- Flour work surface and roll dough into a 10×24 rectangle. Cut one inch strips lengthwise (about 8 strips). Twist dough and form a circle. Pinch dough together. Slightly push center of Danish down. Fill with cream cheese filling. Egg wash pastry.
- Bake at 400 degrees for 10 minutes or until golden brown.
