MANSFIELD, Ohio — People will have the opportunity to enjoy Mexican cuisine prepared by Ed Pickens at his restaurant, Cafe on Main, during Cocina Mexicana, which will be held Friday, May 1 at 6 p.m.

Cocina Mexicana is a cooking demonstration during which participants will learn how to make several delicious Mexican dishes and enjoy a buffet dinner of the dishes that were demonstrated (vegetarian options included). There will also be a cash bar. 

Pickens will demonstrate how to create such dishes as fresh guacamole, mango and pineapple salsa, Mexican quinoa salad, chicken mole and black bean enchiladas.

Norman Jones, associate professor of English at OSU-Mansfield, said the purpose of the event is part of a larger mission, “Which includes celebrating different cultures and educating people about them in engaging ways. Food is such a central and important part of most cultures that it can provide a great ‘point of entry’ for learning more about a culture.” 

Cocina Mexicana will coincide with the monthly First Friday Shop Hop event. “We’re hoping that people will come learn about how to cook some scrumptious Mexican dishes and then take the party on the road, joining the First Friday shop-hoppers,” Jones said.

This event is sponsored by the Arts & Lectures Committee at the Ohio State Mansfield/North Central State College campus, in conjunction with the Student Engagement Office and the NC Committee for Social Justice.

“We organize and subsidize Cocina Mexicana for the benefit of our community,” Jones said. “We are intensely grateful for all the support our community gives to the OSU/NCSC campuses, and we hope that these kinds of events help show how much we appreciate and value our community partners.”
